Mashed Potato Casserole (Lebanese-style)

My boss is from Lebanon and we have a beautiful coffee-table cookbook compliments of him. Those of you who know me well know that I love recipe books! I've been wanting to try a few recipes. This was my first.















Mashed potatoes are layered with a "stuffing" made of chick peas, onions & walnuts flavored with sumac, a red-purple dried berry spice.











I used crushed Ritz crackers on top. I need to adjust all the measures to my taste - lots more potato and less oil when preparing the stuffing.
